The raw material: First know your grape

The best way to learn about the grape is to get nose to nose with it.

  1. Pour yourself a glass of Muscat, Moscato, Muscatel, Moscatel, Asti, or Muskatelle; then take in that grapey aroma.
  2. Contrast that aroma with a sip of wine. Is your palate in accord with your nose?
  3. Peel yourself a grape, reserving the skin; then nibble on the flesh. What are you tasting sweetness, acidity, bitterness? Now nibble on the skin and the pips. What are you tasting now?
